Tasting Note

Earthy and mushroomy nose with wild strawberry, Morello cherry and black plum; sappy, slightly peppery palate, fine-grained tannins, raspberry-tinged long finish.

Production Method

100% destemmed; cold pre-fermentation maceration; fermentation in stainless steel; aged in 500L French oak barrels (≈20% new) for ~12 months; light filtration and bottled by gravity.
