Tasting Note
Bright red cherry and raspberry, subtle earth and stone-mineral notes, light spice and floral lift. Silky texture, balanced acidity, restrained oak and fine-grained tannins; medium body and a moderately persistent finish.

Western: roast duck, coq au vin, mushroom risotto, pork loin, beef bourguignon, soft cheeses. Asian: Peking duck, hoisin-glazed pork, miso-glazed cod, teriyaki salmon, shiitake mushroom stir-fry, Korean bulgogi.
Production Method
Hand-harvested Pinot Noir; 100% destemmed with cold soak; indigenous-yeast fermentation in temperature-controlled stainless vats; aged 10–15 months in large (500L) French oak barrels; light filtration and gravity bottling.
