Tasting Note

Red and dark cherry, raspberry, forest floor, light tobacco and spice; medium-bodied with supple but present tannins and a peppery, savory finish.


Food Pairing

Western: roast duck, grilled pork, mushroom risotto, lamb stew, aged cheeses. Asian: Peking duck, char siu (Cantonese BBQ pork), miso-glazed salmon, Korean BBQ (pork/beef), shiitake hot pot.


Production Method

Hand-harvested Pinot Noir, fermented in stainless vats with careful extraction; aged ~12 months in large 500L oak barrels (≈25% new) to preserve fruit and structure.
