Tasting Note
Concentrated Pinot Noir: black and red cherry, raspberry, violet and baking spice with sous-bois/forest floor notes. Silky, refined tannins, mineral backbone and a long, savory cocoa-tinged finish.
Food Pairing
Western: roasted lamb, rib‑eye, mushroom risotto, boeuf bourguignon, aged Comté or Beaufort. Asian: Peking duck, grilled wagyu or galbi, miso‑glazed black cod, shiitake hot pot, soy‑glazed pork belly.
Production Method
Hand-harvested, careful sorting; native-yeast fermentation with malolactic conversion; élevage 12–18 months in French oak (significant new oak for grand cru); lightly filtered.
Vineyard Info
Domaine Charlopin-Parizot (founded 1977) is led by Philippe Charlopin (trained with Henri Jayer). The 25‑ha estate in the Côte d’Or owns several grands crus, including a small Echézeaux parcel; modern sorting and meticulous élevage are hallmark practices.
