Tasting Note
Perfumed red and black cherry, wild raspberry, violets, sous-bois, Asian spice and a mineral spine; silky texture, supple tannins and a long, spicy finish.

Roast duck, mushroom risotto, lamb chops, beef carpaccio; Peking duck, miso-glazed black cod, teriyaki beef, salmon or tuna sushi, mushroom soba.

Production Method
Hand-harvested, gentle extraction; fermented with moderate whole-cluster; aged ~12–18 months in French oak barrels (small portion new).
