Tasting Note

Concentrated Grand Cru Chardonnay: lemon oil, green apple, white peach, toasted almond, brioche and subtle vanilla from oak, with flinty minerality, vivid acidity and a long saline finish.

Western: lobster Thermidor, lobster or crab with beurre blanc, roasted chicken/veal in creamy sauce, foie gras, aged Comté or Gruyère. Asian: miso-glazed sea bass, soy-steamed whole fish, ginger-scallion lobster, rich Thai coconut curries, Chinese steamed fish with ginger and scallions.


Production Method

Hand-harvested grapes; gentle pressing, barrel fermentation (indigenous yeasts), malolactic fermentation and élevage 11–18 months in French oak (portion new); light filtration before bottling.
