Tasting Note

Concentrated red and black cherry, cassis, forest floor, iron‑tinged minerality and spice. Silky texture, refined tannins and a long, saline finish with baking‑spice and subtle oak influence.


Food Pairing

Roast lamb, beef bourguignon, mushroom risotto, aged Comté; Asian: Peking duck, char siu, beef bulgogi, miso aubergine or mushroom hot pot.


Production Method

Hand‑harvested Pinot Noir, partial destemming, cold soak, indigenous yeast fermentation, extended maceration and ageing ~12–18 months in oak (often significant new oak for grand cru).
