Tasting Note
Concentrated Grand Cru Pinot Noir: dark cherry, black raspberry, forest floor, spice and iron minerality with subtle vanilla/cedar from oak. Silky yet structured tannins, bright acidity and a long, lingering finish.
Food Pairing
Western: roast duck, roasted lamb, beef short ribs, mushroom risotto, aged Comté or Gruyère. Asian: Peking duck, char siu, beef yakiniku, mushroom hot pot (nabe), soy/ginger glazed salmon.
Production Method
Hand-harvested fruit, traditional red vinification (often indigenous yeasts), cuvaison followed by élevage ~12–18 months in French oak (higher proportion of new oak for Grand Cru).
