Tasting Note

 

Crisp orchard and citrus (lemon, green apple) with white flowers, subtle toasted hazelnut and chalky minerality; medium-bodied, fine lees creaminess, bright acidity and a clean, saline finish.

 

Food Pairing

 

Western: grilled scallops, roasted chicken, buttery seafood, creamy pasta, soft goat cheese. Asian: sashimi/sushi, miso-glazed cod, tempura, light Vietnamese or Thai seafood dishes.

 

Production Method

 

Hand-harvested Chardonnay; direct pressing, gentle/whole-berry pressing with native-yeast fermentation and élevage on fine lees in tank and neutral French oak (10–12 months).
