Tasting Note
Pale gold with green hues. Aromas of white flowers, pear, peach, citrus and toasted almond. Medium-bodied with creamy texture, bright mineral acidity and a slightly saline, lingering finish.

Western: oysters, scallops, grilled/poached salmon, roast chicken with cream sauce, soft cheeses (Brie, Epoisses). Asian: sushi/sashimi, miso-glazed cod, tempura prawns, steamed white fish with ginger and scallions.
Production Method
100% Chardonnay; barrel fermented on native yeasts and aged ~12 months in 228L barrels (c.20% new oak). Minimal-intervention viticulture, no bâtonnage; some finishing in stainless tanks.
