Tasting Note
Pale gold with green highlights. Aromas of white orchard fruit, acacia blossom and subtle anise. Palate is full, textured and mineral-driven with citrus and saline lift, finishing bright, precise and refreshing.
Food Pairing
Roast chicken, lobster, scallops, creamy pasta, Brie and Camembert; Asian: miso-glazed cod, sushi (salmon/sea bream), tempura, mild Thai green curry.
Production Method
Hand-harvested Chardonnay vinified with natural yeasts; aged ~12 months in 228L barrels (modest new oak ~20%), limited bâtonnage and minimal-intervention; some stainless-steel used.
