Tasting Note
Fresh elderflower, green pear and candied citrus zest with vibrant high acidity, soft mid-palate density and a clean, mineral finish. Light, precise and aromatic.

Oysters, citrus-marinated fish, grilled white fish, roast pork, goat cheese; Asian: sushi, sashimi, Thai green curry, spicy Szechuan pork, Vietnamese spring rolls.
Production Method
Fermented in 600L demi-muids (large oak) in a refrigerated container adjacent to the vineyard; two barrels used German yeasts and a third underwent wild fermentation. Ferment was cooled/stopped, blended in tank. Vegetarian/vegan friendly.

Made from fruit grown on Koomooloo vineyard on Mount Canobolas slopes (high-altitude volcanic soils). Philip Shaw established the site; brand now run by his sons Daniel and Damian. Estate-focused cool-climate producer.
