Tasting Note
Bright dark cherry and ripe plum with black pepper, clove, subtle vanilla‑cola and earthy forest floor; medium-bodied, savoury fine tannins and a long spicy, elegant finish.

Food Pairing
Western: roast lamb, grilled rib‑eye or beef short ribs, braised short rib. Asian: char siu, Korean BBQ (bulgogi), Szechuan beef, hoisin duck, teriyaki salmon.

Production Method
Hand‑harvested and hand‑sorted; open‑vat fermentations with ~60% whole‑bunch, 2% Viognier co‑fermented; malolactic in spring and ~11 months élevage in French barriques (c.30% new).
