Yellow peach, lemon balm and mandarin oil with dandelion, winter-melon and popped‑corn flint. Savoury, nutty oak frames bright citrus acidity; medium-bodied, poised and focused with a lingering mandarin‑oil finish.
Food Pairing
Roast chicken, pork belly, creamy mushroom risotto, lobster/seafood pasta; Asian: sashimi, sushi, tempura prawns, miso‑glazed cod, soy‑and‑ginger glazed scallops; aged Brie or washed‑rind cheeses.
Production Method
Hand-picked parcel (Californian clone); gentle whole‑bunch pressing; fermentation and maturation in French oak (part new); partial malolactic and lees ageing before bottling.
Vineyard Info
Philip Shaw (ex‑Rosemount) founded Philip Shaw Wines; fruit often from Koomooloo vineyard (planted 1989). The Number Series (No.6) is a premium single‑parcel Chardonnay in the Orange program.
