Tasting Note
Bright citrus (grapefruit, lemon) and white peach with Granny Smith apple, cashew and toasty French oak; flinty minerality, focused acidity and a medium-bodied, savory finish.

Food Pairing
Western: roast chicken, butter-poached lobster, creamy mushroom risotto, seared scallops. Asian: miso-glazed black cod, tempura prawns, rich sushi/nigiri, lightly spiced Thai fish curry.

Production Method
Hand-harvested fruit, whole-bunch pressing, indigenous yeast fermentation in French oak barriques (≈30% new); partial malolactic, 10 months on lees with periodic bâtonnage.
