Tasting Note
Intense dark cherry, blackberry, violets, cocoa and crushed stone; ultra-fine, velvety tannins, bright acidity and long, elegant finish.

Food Pairing
Western: grilled steak, roast lamb, braised short ribs, aged Pecorino or Parmigiano. Asian: Peking duck, Korean BBQ (bulgogi), char siu, Sichuan beef or teriyaki beef dishes.

Production Method
Estate-grown organic Merlot; spontaneous/native fermentations in vats; 18–20 months aging in French oak barriques (partially new).
