Tasting Note
Seductive mix of black and red fruit (cassis, blackberry), cedar, graphite, tobacco and dark chocolate; silky, cashmere-like tannins, bright lift and a long, mineral finish. (Ageworthy Pauillac second wine).
Food Pairing
Western: grilled ribeye, roast lamb, braised short rib, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi), char siu, beef rendang or savory Sichuan beef. Rich umami and fatty dishes complement the wine’s tannins and fruit.
Production Method
Grapes from younger vines; harvested in small open baskets, fermented in Mouton oak vats and matured in French oak barrels using traditional élevage.
