Tasting Note
Dense, full-bodied Pauillac: blackcurrant, blackberry and plum with Chinese five-spice, violets and licorice; vanilla from new oak, polished yet grippy tannins and a long, minty finish.
Food Pairing
Western: grilled ribeye, roast lamb, venison, beef bourguignon, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), braised oxtail, Chinese red-braised beef.
Production Method
Grapes from selected younger vines, harvested Sept–Oct 2018, vinified in oak vats and matured entirely in new French oak barrels; traditional Bordeaux vinification and selection.
Vineyard Info
