Tasting Note

Ripe red and black fruit (cherry, blackberry) with violet, cocoa, tobacco and licorice notes. Medium‑full body, silky yet firm tannins, bright freshness and a long mineral finish.


Food Pairing

Western: roast lamb, braised beef, duck confit, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ, miso glazed aubergine, shiitake/mushroom hot pot.


Production Method

Parcel vinification with indigenous yeasts; matured about 16 months in a mix of new and used French oak (≈50% new).
