Tasting Note
Delicate floral nose (apple blossom, white flowers), orchard and citrus fruits, brioche and light toast. Crisp, silky mousse with balanced acidity and a refined, lingering finish.

Food Pairing
Western: oysters, raw shellfish, smoked salmon, ceviche, grilled/poached white fish, roasted chicken with cream sauce, soft cheeses. Asian: sushi and sashimi, tempura, dim sum, lightly spiced Thai seafood, Chinese seafood dishes.

Production Method
Méthode traditionnelle (secondary bottle fermentation). Blend of ~40/40/20 with ~12–20% reserve wines; matured ~3 years in chalk cellars, riddled, disgorged and lightly dosed.
