Tasting Note
Pronounced star-anise and fennel aromas with licorice and fresh herbal notes; sweet-anise on the palate, light citrus and cooling anise finish, moderately long and refreshing when diluted.

Food Pairing
Western: charcuterie, aioli, bouillabaisse, grilled sardines, strong goat cheeses. Asian: grilled prawns with lemongrass, Vietnamese fish-sauce dishes, Thai grilled chicken, spicy Sichuan or bold-flavored dishes (contrast with anise).

Production Method
Blend of distillates and botanical extracts (star anise, fennel and ~14 herbs), sweetened and coloured, bottled at 40% ABV; traditionally diluted with cold water before drinking.
