Tasting Note

Fine mousse with saline-mineral core, citrus and orange rind, sea spray/oyster-shell notes, delicate texture, layered flavors and a long saline finish.

Western: oysters, scallops, shellfish, sushi, sashimi, grilled white fish, roast chicken with lemon, creamy pasta. Asian: sushi and sashimi, grilled prawns with yuzu, sashimi, light Thai seafood salads, Chinese steamed fish.


Production Method

Biodynamic, hand-harvested, grape-by-grape selection, whole-bunch pressing, indigenous yeast fermentation in stainless steel, short tank ageing then ~100 months on lees before disgorgement.


Vineyard Info

From the historic Clos del Serral parcel (vines planted 1954) within Raventós i Blanc; Pepe Raventós farms biodynamically, working the plot by hand and with Breton horses. Family estate since 1497.
