Tasting Note
Concentrated, precise Chardonnay: grapefruit, white peach, lemon curd, nougat, roasted hazelnut, oyster-shell/flint minerality, restrained French oak, creamy lees texture, bright acidity and a long saline finish.

Food Pairing
Western: roast chicken, lobster thermidor, creamy mushroom risotto, seared scallops. Asian: miso-glazed black cod, tempura prawns, sushi/sashimi (salmon/uni), pork belly with hoisin.

Production Method
Multi-vintage blend (20% each of 2011, 2012, 2014, 2016, 2021). Older vintages decanted under inert gas (transvasage) and rebottled. Whole-bunch pressing, barrel fermentation, malolactic fermentation and lees stirring in French oak.
