Concentrated, dark blackberry, damson and plum fruit with violet, liquorice, roasted chestnut and cocoa nuances. Silky, ripe tannins, bright acidity and long, savory finish.
Food Pairing
Western: grilled lamb chops, roast beef, braised short ribs, aged cheddar. Asian: Korean BBQ (galbi), Sichuan beef, char siu pork, teriyaki beef skewers.
Production Method
Fermented Shiraz parcels from multiple SA regions; matured ~12 months in large, old oak vats/1000–2000L casks (no new oak), emphasising fruit over oak.
