Tasting Note

Pale gold; bright citrus, white peach and nectarine with wet stone/mineral and subtle nougat, almond and brioche notes. Fresh, restrained acidity and a saline, very long finish.

Roast chicken with herbs, lobster or butter-poached shellfish, creamy mushroom pasta; seared scallops, miso-glazed black cod, delicate sushi or sashimi, tempura vegetables.


Production Method

Hand-picked, whole-bunch pressed; portion filled direct-to-barrel for native (spontaneous) fermentation; 100% malolactic; lees stirring; matured nine months in French oak (50% new).
