Tasting Note
Dense, full-bodied blackcurrant and blackberry fruit with dark chocolate, espresso, baking spice, cedar and savory notes (bresaola, black pudding). Lively acidity, firm structural tannins and a long, mineral finish.

Food Pairing
Western: grilled or roasted beef, lamb, venison, aged cheddar. Asian: Korean BBQ (bulgogi), Peking duck, char siu, beef rendang, spiced lamb kebabs.

Production Method
Blend of Napa Valley Cabernet and South Australian Shiraz. Fermented and matured 16 months in oak (80% new American, 20% new French) barriques; partial barrel fermentation techniques used.
