Tasting Note

Dense blackberry and black cherry, anise and liquorice with mocha and dark chocolate notes, peppery spice, fine-grain tannins, bright acidity and a long, savory finish.

Western: grilled lamb chops, roasted or braised beef, steak with peppercorn sauce, aged cheddar. Asian: char siu, Sichuan pepper beef, Korean BBQ short ribs, miso‑glazed aubergine, richer teriyaki dishes.


Production Method

Hand‑picked fruit; open‑fermented, basket‑pressed; completed fermentation in barrel; matured 18 months in French (26% new) and American (6% new) oak hogsheads.
