Tasting Note
Very pale, intensely aromatic with jasmine, citrus blossom, lime zest and finger-lime. Juicy palate of lime, mandarin and talcy acid, bright mineral finish and a hint of floral sweetness.

Food Pairing
Western: grilled white fish, ceviche, roast chicken with lemon butter. Asian: sushi/sashimi, Thai green curry, steamed prawns with lime and chilli, Vietnamese spring rolls.

Production Method
Hand-harvested parcels from Eden and Clare valleys, fermented and matured in stainless steel for five months; sealed under screwcap to preserve freshness.
