Tasting Note
Powerful, concentrated black and blue fruits—blackberry, black cherry—layered with mocha, espresso, anise, black olive and exotic spice. Dense, fine-grained tannins, bright mid-palate lift and a long, mocha‑tinged finish.
Food Pairing
Western: grilled ribeye, roast lamb, beef Wellington, aged cheeses. Asian: Peking duck, char siu, Korean BBQ (galbi), spicy Sichuan beef, hoisin‑glazed pork.
Production Method
Multi‑regional Shiraz harvested across South Australia; traditional fermentation with extended maceration, matured 19 months in 100% new American oak hogsheads before bottling.
