Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, venison, aged cheddar or hard washed-rind cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi/galbi), beef rendang, spicy Szechuan beef.
Production Method
Multi-vineyard blend fermented with extended maceration; matured ~18 months in 100% new American American oak hogsheads; blended and bottle-aged prior to release.
