Dense black-fruit core of blackberry and plum with mocha, dark chocolate, vanilla, black pepper, olive and savory spice; firm slatey tannins, integrated American oak and a very long, savory finish.
Food Pairing
Western: grilled/roasted ribeye, slow-braised lamb shank, venison, aged cheddar and blue cheeses. Asian: char siu/BBQ pork, Peking duck, soy-glazed beef short ribs, Sichuan-style beef, Korean BBQ (bulgogi).
Production Method
Multi-district Shiraz-dominant blend; fermented and matured ~20 months in 100% new American‑oak hogsheads, then blended and bottled following traditional cellar ageing.
