Tasting Note
Ferrous, savoury nose with liquorice, fennel and cured-meat notes; tomato relish and caper-brine. Palate shows sweet dark fruits (plum, black cherry), sumac tang, baking spices and velvety mid‑palate richness. Fine powdery tannins and a long, savoury finish.

Food Pairing
Western: grilled/roast lamb, roast beef, aged cheddar, mushroom risotto. Asian: Peking duck, Cantonese char siu, braised beef noodle, Sichuan lamb skewers, Korean BBQ.

Production Method
Hand-harvested Cabernet Sauvignon (Shangri‑La) and Marselan (Ningxia); fermented, blended and matured 12 months in French oak hogsheads (66% new, 17% 1‑yo) and American oak (17% new).
