Tasting Note
Delicate white flowers, candied lime, petrol and mint on the nose; zingy, sherbet-like palate of lime and chalky minerality, very clean, bright and focused with a precise finish.

Food Pairing
Western: oysters, ceviche, grilled prawns, roast chicken, goat or chèvre cheese. Asian: sushi/sashimi, Vietnamese spring rolls, Thai green papaya salad, lightly spiced Chinese/Thai seafood dishes.

Production Method
Single-vineyard fruit harvested cool; fermented and matured in stainless steel, unoaked, bottled under screwcap to retain aromatics.
