Tasting Note
Dense blackcurrant, cassis and mulberry with violet, tobacco, graphite and cedar; mocha and vanilla from new American oak. Full-bodied, concentrated dark fruit, mint and spice layers, firm grainy tannins and a long savory, mineral-tinged finish.

Food Pairing
Western: grilled ribeye, roast lamb, venison, aged cheddar, beef Wellington. Asian: Korean BBQ (galbi), char siu, Peking duck, spicy Szechuan beef, beef teriyaki.

Production Method
Fermented in open stainless steel with partial barrel fermentation; matured 18 months in 100% new American oak hogsheads (American oak) before bottling.
