Tasting Note
Deep ruby with blackcurrant, boysenberry and dark cherry framed by brioche/blueberry-pastry, steamed-fig and treacly notes; savory pepper-crusted ham, green peppercorn, dark chocolate and vanilla oak. Creamy, bright palate with fine tannins and a cherry-cream finish.
Food Pairing
Western: grilled ribeye, roast lamb, beef short ribs, mushroom risotto, aged cheddar. Asian: Peking duck, char siu, Korean BBQ (bulgogi), beef rendang, spicy Szechuan beef.
Production Method
Fermented separately; matured ~16 months in American oak barriques (approx. 53% new), then blended from Napa Cabernet and Paso Robles Shiraz.
