Tasting Note
Very pale lime-green. Intensely aromatic of Tahitian lime, feijoa, lychee and white blossom. Mouthwatering lemon-lime and lemongrass, green apple skin, chalky minerality and pristine, long finish with a fine sugar–acid tension.

Food Pairing
Western: oysters, seared scallops, ceviche, roast chicken, goat cheese. Asian: sushi/sashimi, Thai green curry, Vietnamese spring rolls, spicy Szechuan or Malaysian dishes.

Production Method
Hand-harvested, cool-climate fruit fermented in stainless steel with minimal skin contact; no oak, retained natural acidity, bottled under screwcap.
