Tasting Note
Glossy dark red; aromas of mahogany, cigar box, black fruits, cocoa, coffee, liquorice and baking spice. Palate shows blackcurrant, plum, blackberry, morello cherry, dark chocolate and mocha, with succulent acidity, integrated oak and cocoa-like tannins; long, structured finish.
Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, mushroom risotto, aged hard cheeses. Asian: Korean BBQ/bulgogi, Chinese char siu, Sichuan beef, spicy Korean stews, grilled yakitori.
Production Method
Multi-regional Cabernet and Shiraz fermented (some parcels barrel-fermented), matured ~12 months in American oak hogsheads (36% new), including barrels previously used for Grange; blended to balance Cabernet structure and Shiraz richness.
