Tasting Note
Dense black fruits (blackcurrant, blackberry, plum), dark chocolate/mocha, cedar, olive and savory spice; ripe, rounded tannins, balanced acidity and a long vanilla-oak finish.
Food Pairing
Western: grilled ribeye, roast lamb, beef short ribs, aged hard cheeses, mushroom risotto. Asian: Korean BBQ (bulgogi), Peking duck, hoisin/char siu pork, Sichuan pepper beef, teriyaki-grilled beef.
Production Method
Separate ferments for varieties, blended and matured ~12 months in American oak hogsheads (22% new); some components matured in barrels previously used for Grange.
