Tasting Note

Dense dark-plum and blackberry core with liquorice, dark chocolate, ironstone/tarry minerality, exotic spice and savory/hoisin notes. Very structured with grippy ripe tannins and a long, saline-tinged finish.


Food Pairing

Western: grilled or roasted lamb, slow-roasted beef, barbecued ribs, aged cheddar, blue cheese. Asian: Peking duck, char siu/hoisin pork, Korean BBQ, spicy Szechuan beef, braised short rib with five-spice.


Production Method

Hand-harvested Shiraz; traditional fermentation; matured ~12 months in mixed oak (French and American hogsheads and puncheons; ~24% new American, ~23% new French).
