Tasting Note

Concentrated blackberry and blackcurrant with dark chocolate, mocha and hazelnut; cedar, sandalwood and menthol lift; savoury caperberry/iced-tea notes, bright acidity, fine close-knit tannins and a long spicy finish.

Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar, mushroom ragù. Asian: Korean BBQ (bulgogi/galbi), Peking duck, char siu, beef rendang, Sichuan pepper beef.


Production Method

100% Cabernet Sauvignon (85.1% Napa Valley, 14.9% South Australia). Aged ~16 months in new French (80%) and new American (20%) oak; some barrel fermentation; matured in oak before bottling.
