Tasting Note

Fresh, mineral-driven Champagne: ripe white/stone fruit, honeyed brioche, toasted nuts and subtle undergrowth. Bright citrus acidity, marked salinity and fine mousse lead to a long, precise, sapid finish.

Food Pairing

Oysters, scallops, lobster, smoked salmon, fresh sushi/sashimi, tempura, grilled white fish, roast chicken, creamy cheeses, goat cheese, Thai grilled prawns, Vietnamese spring rolls.

Production Method

Single-plot co-plantation (Les Fervins) 70% PN/30% Ch; hand-harvested; fermented in stainless steel (some parcels in oak), no malolactic; ~11 years on lees; disgorged 03-Nov-2022; dosage 4.8 g/L.
