Tasting Note
Gold-hued Champagne with baked apple, lemon curd, grilled pineapple, grapefruit, toasted brioche, vanilla and roasted hazelnut notes. Silky mousse, tangy acidity, saline mineral core and a creamy, long finish.

Oysters, smoked salmon, lobster or creamy chicken (Western); sushi, sashimi, tempura, dim sum, and lightly spiced Thai or Vietnamese seafood (Asian). Also pairs with mushroom risotto and soft cheeses.
Production Method
Blend of Grand Cru parcels from Verzy and Verzenay (Perpétuelle reserve). Partial oak fermentation and use of oak-aged reserve wines; 4–6 years on lees; low dosage (~5–6 g/L); malolactic often blocked.
