Tasting Note

Bright tropical and citrus aromas (passionfruit, guava, lime, Granny Smith apple); crisp, mouthwatering palate with stone-fruit note, clean acidity and a long, dry finish.


Food Pairing

Western: grilled white fish, oysters, ceviche, goat cheese salad, roasted chicken with herbs. Asian: sushi/sashimi, Vietnamese spring rolls, Thai green papaya salad, light spicy Thai or Vietnamese seafood dishes.


Production Method

Fruit is cold-settled then fermented in stainless steel tanks; finished dry with ~5 g/L RS, spent ~3 months on lees before bottling; sealed under screwcap.
