Tasting Note
Bright garnet-purple; aromas of strawberry, raspberry, violets and light spice. Medium-bodied with fresh acidity, moderate tannins and a persistent, fruity finish.

Food Pairing
Western: roasted red meats, beef ragù, game, porcini pasta, aged cheeses (Parmigiano-Reggiano). Asian: Peking duck, char siu or teriyaki pork/beef, bulgogi, mushroom-based ramen or lightly spiced stir-fries.

Production Method
Controlled-temperature fermentation with relatively short maceration. Aged ~8–12 months (20–30% in barrique, remainder in large oak casks), then brief bottle rest before release.

Family-run Pelissero estate since 1960; 100% estate fruit from young Nebbiolo plantings (density ~5,000/ha) in Treiso, Neive and Barbaresco zones.
