Tasting Note
Bright purple-red. Aromas of red cherry, plum and violets. Juicy red/black fruit on the palate with soft dusty tannins, balanced acidity and a characteristic slightly bitter almond finish. Medium-bodied and very drinkable.
Food Pairing
Western: Italian salumi and antipasti, pasta with meat ragu, roasted pork, grilled lamb, aged cheeses. Asian: char siu (Cantonese BBQ pork), yakitori, Korean BBQ, pork dumplings, milder Sichuan or mapo-style dishes.
Production Method
Hand-harvested Dolcetto; controlled-temperature fermentation with short maceration (4–5 days), cold decanting, aged 6–7 months in stainless steel, ~1 month in bottle before release.

Family-owned Pelissero estate based in Treiso. Founded mid-20th century (first bottles 1960), ~42 ha estate, focused on indigenous Piedmont varieties (Nebbiolo, Barbera, Dolcetto).
