Tasting Note
Pale lemon with tropical guava, pineapple and melon, layered with grapefruit, honeysuckle, crushed herbs and a wisp of struck match. Richly textured, crisp acidity and a phenolic drive; long, structured finish.
Food Pairing
Western: shellfish (linguine ai frutti di mare), grilled white fish, roast chicken, pork belly. Asian: sashimi, sushi, steamed fish, Thai-style fish curries, pork dumplings/gyoza.
Production Method
Grapes fermented separately: majority Sauvignon in stainless steel (about half whole-bunch and skin-matured ~200 days), Semillon fermented in oak puncheons. Both matured on lees ~10 months, blended and bottle-aged ~1 year.

Family-owned Pegasus Bay (Donaldson family), established 1986. Estate vines (many 30+ years) on Glasnevin Gravels in Waipara Valley, cool nights and free-draining soils producing concentrated fruit.
