Tasting Note
Bright citrus and tropical notes (passionfruit, guava, grapefruit) with green apple, fresh herbs and wet stone; textured, vividly acidic palate with phenolic grip, Semillon-derived richness and a long, racy finish.
Food Pairing
Western: oysters, seared scallops, grilled white fish, goat cheese, roast chicken with herbs. Asian: sushi/sashimi, ceviche, Vietnamese spring rolls, Thai green papaya salad, mildly spicy green curry.
Production Method
Selection fermented whole-bunch with ~200 days skin contact; cool stainless-steel ferments for free-run juice; small portion barrel-aged Semillon; aged on lees ~10 months; minimal intervention.
Vineyard Info
