Tasting Note

Aged, off-dry Riesling with a golden tint: bright lime, mandarin, baked apple, nectarine, honeycomb and jasmine layered over flinty minerality. Concentrated and mouth‑filling yet elegant, with tangy acidity and a long, textured finish.

Western: shellfish, oysters, salt & pepper squid, roast pork, roast chicken, duck with citrus sauce, liver pâté. Asian: Thai green curry, spicy Szechuan dishes, sushi, Vietnamese seafood salads.


Production Method

Hand‑harvested Riesling, gentle whole‑cluster pressing, slow cool fermentation with fermentation stopped to retain off‑dry balance; a touch of natural CO2 and extended bottle ageing (Aged Release program) to develop tertiary characters.

Family‑owned Pegasus Bay (Donaldson family) estate on the Glasnevin Gravels in Waipara Valley, noted for ageworthy Riesling and meticulous, cellar‑oriented winemaking since the 1980s.
