Tasting Note
Aged, off-dry riesling with lime, baked apple, honeysuckle and manuka-honey notes, subtle petrol/mineral complexity, a delicate spritz, bright racy acidity and a long steely, honeyed finish.

Food Pairing
Seared scallops, citrus-marinated white fish, roast pork or pork belly, goat or blue cheese, Thai green curry, Korean fried chicken, sashimi/sushi, spicy Szechuan dishes.

Production Method
Grapes gently pressed; cool, slow fermentation (including a portion of botrytised fruit), minimal intervention and bottled to retain a touch of natural CO2 for freshness.
