Tasting Note
Pale lemon; opulently scented with mandarin, pineapple, honeydew, citrus blossom, green apple, kaffir lime and oriental spice over steely mineral notes. Rich yet precise palate, textured mouthfeel, gentle sweetness balanced by bright acidity and phenolics, slight spritz, long resonant finish.

Food Pairing
Ceviche, sushi/sashimi, grilled white fish, roast pork or pork belly, Thai green curry, spicy Szechuan dishes, lemon-roasted vegetables, goat cheese, Asian-style seafood salads.

Production Method
Extended hang time with occasional noble botrytis; free-run juice fermented slowly at cool temperatures. Wine handled carefully to retain a small natural CO2 (slight spritz). Minimal intervention; stainless steel fermentation.

Donaldson family estate (founded 1986) in Waipara Valley. Vines over 35 years on Glasnevin Gravels; cool nights and free-draining soils yield concentrated, low-yield fruit. Sustainable practices.
